READ ALL THE CONTRACTS before agreeing and signing.

Know what you don't want, and don't let them talk you into anything extra.
Be firm in your budget, and walk away from vendors that cannot or will not provide what you want and need for what you're willing to pay.
And remember the hokey but simple truth, it's not the wedding that matters, but the marriage.
If you do all that, most greedy vendors won't want to deal with you, and they will move on to easier targets.

I would recommend hiring an experience wedding coordinator that specializes in elegant weddings for the bride on a budget.
Also, weddings by Stephanie has a very good cd.http://www.fireyourweddingplanner.com/newlywedtips
This is an excellent resource. She also emails you many times a week with valuable information. My daughter is a wedding coordinator and uses lots of her tips.

Research research research! Get at least 3 quotes for each service. Get on theknot.com and weddingchannel.com and see what the various wedding services are going for in your area. Ask recently married friends and family where they got the best deals.

The biggest thing is research and comparisons between companies that offer similar services. Don't only research for cost, you also want quality, personable people who are easy to deal with, and convenience of location, etc.
The second thing is references, references, references!!!!!
