my kids are pretty picky, but I love casseroles and they are so easy

Veggie Chicken Rice Casserole

INGREDIENTS

* 2 (10.75 ounce) cans condensed cream of chicken soup
* 1 whole cooked chicken, cut into pieces
* 1 (16 ounce) package frozen mixed vegetables, thawed
* 2 cups cooked rice
* 2/3 cup water
* 1/2 cup crushed buttery round crackers

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl combine the soup, chicken, cooked vegetables, cooked rice and water. Mix well and spread mixture in a 9x13 inch baking dish. Sprinkle crushed cracker crumbs on top and bake in the preheated oven for about 15 to 20 minutes. Let cool 10 minutes and serve.

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

You could make a chicken and rice casserole, tater tot casserole, or even go with an all vegetable casserole with rice in it. You almost put anything in a casserole!

Sloppy Joe Mac and Cheese

"Two classic comfort foods combined to make one hearty and very satisfying casserole."INGREDIENTS:1 (16 ounce) package elbow macaroni1 1/2 pounds ground beef1 (14.5 ounce) can canned diced tomatoes1 (6 ounce) can tomato paste1 (1.3 ounce) envelope sloppy joe seasoning1/4 cup butter1 small onion, minced1/4 cup all-purpose flour1 teaspoon ground dry mustard1 teaspoon salt1/4 teaspoon ground black pepper3 cups half-and-half1 tablespoon Worcestershire sauce4 cups shredded sharp Cheddar cheese
DIRECTIONS:1.Bring a large pot of lightly salted water to a boil. Place macaroni in the pot, and cook for 8 to 10 minutes or until al dente; drain.
2.Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large casserole dish.
3.Place the ground beef in a skillet over medium heat, and cook until evenly brown. Drain grease. Mix in diced tomatoes, tomato paste, and sloppy joe seasoning. Reduce heat to low, and simmer 10 minutes.
4.Melt the butter in a large pot over medium-high heat. Stir in the onion, and cook until tender. Mix in flour, mustard, salt, and pepper. In a bowl, mix the half and half and Worcestershire sauce. Gradually whisk half and half mixture into the pot. Bring to a boil, and cook 1 minute, until slightly thickened. Remove from heat. Mix in 3 cups of cheese. Stir cooked pasta into the pot, evenly coating with the sauce. Transfer to the casserole dish. Layer with the beef mixture and top with remaining cheese.
5.Cover, and bake 30 minutes in the preheated oven. Remove cover, and continue baking 10 minutes, until bubbly.

Tuna Noodle Casserole

2 cans tuna fish
2 cans cream of mushroom soup concentrate
Boiled noodles
Mix together drained tuna fish, cream of mushroom soup concentrate and boiled noodles.
Transfer into an oven-safe dish.
Bake into a preheated 350°F [180°C] oven, for 45 minutes.

( I like to crumble some Ritz crackers or crushed chips on top to add a little crunch and salt )

Baked Ziti with Tomato, Mozzarella & Sausage

Olive oil
1 large onion, cut in small dice
2 cloves garlic, minced
3/4 lb. sweet Italian pork sausage, removed from its casing and crumbled
Salt and freshly ground black pepper to taste
1/4 cup dry red wine
35-oz. can whole plum tomatoes, chopped, with their juice
1/4 cup chopped fresh marjoram or oregano (from about 6 large sprigs)
1 cup fresh ricotta cheese
1 cup freshly grated mild pecorino cheese
Pinch nutmeg, preferably freshly grated
1/3 cup chopped fresh flat-leaf parsley
1 lb. ziti
1/2 lb. mozzarella, preferably fresh, cut in small cubes

Heat the oven to 425°F. Lightly oil a large, shallow baking dish. Bring a large pot of salted water to a boil.

In a large skillet, heat about 2 Tbs. olive oil over medium heat. Add the onion and sauté until soft, about 5 min. Add the garlic and crumbled sausage and sauté until the sausage starts to brown. Season with salt and pepper. If the sausage gives off a lot of fat, pour off most of it, but leave a little to add flavor to the sauce. Add the red wine and let it boil until it's almost gone. Add the tomatoes with all of their juices and cook, uncovered, at a lively simmer for about 10 min. The sauce will thicken slightly. Add the marjoram or oregano and taste for seasoning.

In a large mixing bowl, mix together the ricotta, about half of the grated pecorino, the nutmeg, and the parsley. Season with salt and pepper.

Meanwhile, cook the ziti until al dente. Drain well and toss it with the ricotta mixture until well coated. Add the sausage and sauce and mix again. Add the mozzarella and toss gently. Pour everything into the baking dish and sprinkle the remaining pecorino on top. Bake uncovered until lightly browned and bubbling, about 20 min. Serve right away.

I love green bean casserole, german potato cassarole, taco bake, might want to try chicken parmesion even though it isn't a casserole.

skillet beef and veg stew

1 pound beef
1 bag frozen stew vegtables thawed
1 can chunky garlic and herb tomato sauce
1 can 99% fat free beef broth
2 cans vegtable juice

Cut beef into cubes
Spray 10 inch skillet with cooking spray,heat over medium heat .Cook beef in skillet about 10 minutes stirring occasionally.until no longer pink.
stir in remaining ingredients.heat till boiling,reduce heat cover and simmer 5 minutes stirring occasionally.
serve with your kids favorite bread
