I have 2 suggestions:
1. is a peanut butter blossom (peanut butter cookie with the kiss pressed in the middle) -- see recipe below
2. not really a cookie, but EASY: pretzel rods dipped in chocolate and then sprinkles. OR small pretzels topped with one caramel kiss each (place in oven at 275 for about 8 min to soften). When you take out gently press a pecan half onto the kiss. MMMMM - its a "turtle" treat

I'm sorry to say this, but the best Christmas COOKIES are the ones you get at the store, and you peel the cookies out of the dough. Those are DELICIOUS, but I forgot the brand, so that doesn't really help you. The best Christmas TREATS are called Peppermint Bark. Here's what you need: 3 Bags of White Chocolate (Tiny bags, the ones that are two-thirds of a foot long) 12 Candy Canes About 3 cookie trays It needs to be winter, or you need a REALLY big freezer Instructions: 1. Put the candy canes in a bag and crush them, not to powder, but to tiny chunks. 2. Melt the white chocolate in a bowl (Microwave or oven or stove, however you do it) 3. Mix the peppermint chunks into the melted chocolate. 4. Put the mixture onto the tray (with plastic paper on it) 5. Spread it around until it fills the tray 6. Repeat until all chocolate is on a tray 7. Put the Peppermint Bark outside to freeze, or, put them in your freezer for 10-15 minutes. Enjoy!

1 cup butter, unsalted
1 cup white sugar
2 eggs, lightly beaten
1 teaspoon vanilla
3 cups flour
2 teaspoons baking powder
1 teaspoon salt
In a bowl, cream the butter and sugar. Beat in the eggs and vanilla.
In a second bowl, combine and mix well the flour, baking powder, and salt. Stir flour into butter mixture 1 cup at a time. Chill dough for 3 to 4 hours.
Roll out dough and cut into shapes with cookie cutters or a knife. Brush with milk and sprinkle with colored sugar. Bake on a sheet pan or a parchment lined sheet pan in a preheated 350 degree F oven for 10 to 15 minutes depending on the size of the cookie. Remove cookies to a rack to cool completely.

Mint Cookie
18-ounce roll refrigerated sugar cookie dough, sliced 1/4-inch thin
14-ounce package chocolate mint wafers
1 egg, beaten
1 tablespoon coarsely chopped walnuts or pecans, or enough to cover top of cookies
Preheat oven to 375 degrees F.
Slightly grease a cookie sheet. Place slices of sugar cookies on sheet, about 2 to 3 inches apart. Top each with a chocolate wafer. Cover wafer with another slice of cookie dough. Brush dough with a beaten egg. Press nuts into top of dough. Bake for about 10 minutes.

This one is one of mine. Some say it is a cookie and some say that it is candy.
Corn Flake Candy
1 2/3 cup Corn Syrup
1 2/3 cup sugar
Boil until sugar is melted, remove from heat, then add
1 2/3 tablespoon vanilla
2 1/2 cup peanut butter

10 cups Corn flakes
In a big pan that is coated with butter, put in 10 cups Corn Flakes.
Pour the above mixture over the Corn Flakes and stir with a large spoon that is coated with butter. I have even coated my hands with butter for the last of them to be put on wax paper so not to burn my hands as it is still very hot.
Stir until Corn Flakes are covered. Spoon out on wax paper and let cool.

I use the sugar cookie dough from Pillsbury and slice the cookies as directed.
After they have dried, I use green icing from the can (cake icing, I believe). I use the tip for leaves or for scallops. I ice all around the cookie to make a wreath. I add Cinnamon drops to make berries for the wreath.
We call these "wreath cookies" and, they are a family favorite.
100% sugar and they are worth it! :)
They aren't a lot of trouble to make. It doesn't take long to decorate and they look cute.
As for the mint cookie recipe, have you tried allrecipes.com?
