I do cakes and the one I have used is from the cake supply store (usually in their refrige) it is called Better Cream. It comes in a milk carton and you whip it. It keeps it's shape and does not melt...it is OK not great. When I want something like that especially for under Ganache or to decorate Ganache I make a really fluffy buttercream. If you can whip the butter for a while until it is almost white. Add some good Vanilla and then Add powdered sugar (not a lot because you don't want it to be to stiff) just keep whipping it. It tastes good and turns out to be fluffy almost like whipped cream but you can pipe it out of a bag and do decorating with it. I hope this helps you. I do this all the time.

Try adding a stabilized to it ..such as powdered sugar or Knox gelatin. does not take much of either one. ( of course, dissolve the gelatin first)...
