Are you boiling a whole chicken? Chicken breasts? Boneless? Bone in? Time for boiling really depends on how much of the chicken you're cooking. And don't boil you chicken in a hard, rolling boil.
For a whole chicken, I'd boil 1 hour to 1 1/2 hours.
For boneless breasts, 30 minutes.
Bone-in breasts, 45 minutes.
Thighs & legs, 30 to 45 minutes.
Add a little onion, celery, carrot and garlic to your water and you'll not only add extra flavor to your chicken, but you'll wind up with a reusable chicken broth for soups and sauces.

45 minutes, let sit another 5 after you turn the burner off.
! hour will give you well done meat.
Unless of course your chicken is larger than 3.5 pounds

About an hour of gentle simmering should do it.
