This a great soft cookie recipe...works everytime:-) "These oatmeal cookies are very moist with a good flavor. Add a cup of raisins or nuts if you desire."
Soft Oatmeal Cookies
INGREDIENTS
* 1 cup butter, softened
* 1 cup white sugar
* 1 cup packed brown sugar
* 2 eggs
* 1 teaspoon vanilla extract
* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 1 teaspoon salt
* 1 1/2 teaspoons ground cinnamon
* 3 cups quick cooking oats
DIRECTIONS
1. In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.
2. Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
3. Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

I usually use butter to make soft cookies, shortening tends to make them hard, and don't use an electric mixer this will make them hard also. A trick I learned that if your cookies are hard already, put them in an airtight jar with a slice of fresh white bread. The cookies will absorb the moisture from the bread overnight. This is what a lot of bakers do, it does work. It will even work with oreo cookies!

cover them in air tight containers , the air is what makes cookies get hard and innner line with wax paper or foil so they don't stick together when layed in container.
don't bake them all the way .just long enough to be soft in the middle ..

if it says to bake them for 10-12 minutes take them out in 8-10 minutes.

I've heared that using shortening (Crisco, for example) instead of butter will give you a softer cookie.

My trick is to always cook them a little underdone. This allows them to be soft the next day. :)
