Do I add the potatoes to boiling water or bring the water to a boil with the potatoes in it already?

continue to check on them if their soft and fork can go throught them then their done

Perfect Mashed Potato

Ingredients

1 large baking potato per person
soya milk
vegan margarine

Wash and remove any bad bits from the potatoes. tab a few times with a knife and microwave for 5 minutes on full power. Turn over and microwave for a further 5 minutes. Put in a 200 degree pre heated oven for 1 hour turning over half way through cooking.

Remove from the oven and place onto a chopping board. I find it easiest to use a clean teatowel for holding the potatoes. Slice in half and spoon out the potato into a bowl. I try to keep the skins in tact so that I can stuff them for another dish. Mash the potato with a masher adding a knob of margarine and a tablespoon of milk per person. Mash until the potato is creamy and soft or even use a food mixer. Season to taste.

Boiling: it depends on the size of the chunks you cut, it would be a minimum 10 minutes for small ones, around 20 minutes for large chunks. Check wit a fork to see if they are soft enough.

You can also prepare a great mash by steaming, instead of boiling, the potatoes; it takes longer, 15 to 30 minutes, depending on size.

First of all, use red potatoes for mashed potatoes. They yield a smoother, creamier mashed potato. You may prefer to peel them but leaving the skins on provides better taste and nutrition. Whether you are making a small amount or large amount of mashed potatoes, prep is pretty much the same. Wash the potatoes in cold water to remove soil, cut into 1 inch cubes and place in pot. Rinse and drain cut cubes and add cold water to cover. This will remove excess starch and lessen the chance of boiling your potatoes in "foamy" water. Optional: sprinkle a small amount of salt into the water, about 1/2 teaspoon. Boil over low to medium heat 10-15 minutes. It's not necessary to have your burner on High or to overboil the potatoes. Drain thoroughly in pot. Mash with potato masher for slightly lumpy mashed potatoes or with electric mixer for smoother mashed potatoes. For the creamiest mashed potatoes, add 1/2 cup of mayonnaise to three cups mashed potatoes (5 medium cut-up potatoes). Do not add milk. Milk does not make a creamy mashed potato. Add 1/4 teaspoon pepper or garlic/pepper combo, if desired. If desired, add 1 to 2 tablespoons butter or margarine to mashed potatoes and stir until semi-mixed.

You peel them and then cut them into to cubes. Place them in a pan of water, turn heat on under pot at about medium. Boil them until you can stick a fork in them very easy. Then drain off water, put salt to taste, pepper, and any other spices that you want in them and start mashing them, add a little butter and a tiny bit of milk or cream, mash or stir until mixed and then serve.

potatoes in cold water bring to the boil & simmer until you can pierce potatoe easily all the way through with a knife

Until they are fork tender. No one can really give you a specific amount of time because potatoes vary in firmness and water content.

About 20 minutes, or until they are fork tender... whichever comes first. I usually set the timer for 20 and then start checking.

if you stick them with a fork while they are boiling (as if to pick them up with the fork) and they break in half easily then they are ready to mash
