Dynamat and other similar products are not thick enough to affect the fit of your carpet. Once you find the brand you like go for it. I personally have had great experience with dynamat xtream. the bulk pack is the best way to go if you need a large quantity.

Don't bother wasting money on Dynamat. It works yes, but is pretty overpriced. They only get away with their prices because it is so mainstream and most people have only heard of Dynamat. For the highest of quality materials, get products from Second Skin (secondskinaudio.com). For the best value (best deadener for your dollar) RAAMaudio RAAMmat BXT (raamaudio.com). BXT is butyl based (a type of rubber material) as opposed to most of Dynamat's products being asphault based. To get the same performance, you need a lot thicker of an asphault mat as opposed to a butyl based mat. BXT is 60mil in thickness. Damplifier and Damplifier Pro from Second Skin Audio is 65mil and 80mil in thickness, respectively.
