Cut a pocket in the side of each chop with a sharp knife. Stuff with your favorite stuffing (I like cornbread). Brown on both sides in an oven safe frying pan, then finish in the oven at 350 F. Deglaze the pan on the stovetop with some apple juice while the chops rest on a plate. Yum!

Special Pork Chops

Ingredients:
6 pork chops
2/3 cup brown sugar
1 teaspoon paprika
1 teaspoon sage
1 teaspoon dry mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1-1/2 tablespoons cold water

Preparation:
Preheat oven to 300 degrees. Place pork chops in a long, shallow pan. Do not stack or overlap. Do not brown chops.

Mix all other ingredients together in a bowl to make a paste. Spread paste over chops evenly.

Bake, uncovered, for 1 hour at 300 degrees. After they have baked 45 minutes, turn chops once. Spoon some of the mixture in the bottom of the pan over each chop and finish baking.

Salt and Pepper with a tad of olive oil. Turn you grill on high and place the chops over the fire for a few minutes on each side, just long enough to leave grill marks. Then turn you grill to medium and place the pork on a part of the grill that does not have a flame under it. Cover and cook until the pork is at about 135 - 140 degrees.

Dip the chops in flour that has been seasoned with salt and pepper. Then dip them into egg that has been scrambled with 3 tablespoons of water. After that, coat them with plain bread crumbs that you season with 1 tsp salt, 1/2 tsp pepper and 1/2 tsp garlic powder. Fry them in hot oil until they are medium golden but not dark. Drain on paper towels.

One of the best I've made is to dip each chop in egg and then dip in flour and fry in oil. Like Chicken Fried Steak, but absolutely wonderful...also I add garlic powder and cajun seasoning to the flour to add some flavor.

I mix in a bowl, chopped fresh garlic parsley, or spinach, parmesan and small diced provolone, black pepper and olive oil. Smash it all up in a bowl and stuff into slits in the sides of the chops.

marinate in brown sugar and soy sauce
put butter or other fat into a pan
sear each side on high heat and then reduce heat and cover cook for 5 minutes.

I would marinate in my favorite marinade and broil or grill. Will be great!
