In most places, you can buy an early edition of Sunday's paper fairly early on Saturday.

Depending on the store, some have their ads online. Before "black Friday" a lot of the major stores at least showed their super-specials online. Check the websites of the stores you're interested in.

If the advertisers ever find out that Sunday ads are being freely distributed days early, they may well pull their ads out of that newspaper. It is a serious breach of confidentiality for that to happen.

Mostly, stores don't want people to be able to stall purchases with the knowledge something will go on sale tomorrow. They also don't want their competition to be able to start the cheaper price before they are scheduled to put their own signs up. Wal-mart is good for that little tactic.

Newspaper circulars are pre-printed and with most major newspapers must arrive at their production facilities at least a week prior to publication. The newspaper then inserts the circular in a part of the paper that they print in advance such as Comics, Society, Lifebeat sections etc. In many cases these are then delivered a day of two in advance to the point of sale locations.
So you can see that various people have access to the circulars before Sunday. Namely, the printer, many people at the newspaper, and many people at point of sale locations.
