Green as opposed to white or red cabbage. Such as January cabbage,celtic,savoy. Much darker in colour and with more flavour than the hard white cabbage that is generally used in coleslaw.

A leafy vegetable. Comes in several varieties - spring greens are very leafy and dark green and are stronger in flavour than others. Most cabbages are compact balls of leaves with the best tasting ones being near the centre (heart) of the plant. Savoy is a good one with the outer leaves being slightly crinkly.
Besst if not over cooked.
