My husband says it is safe to leave it over night at room temperature to cool, since it has been cooked twice and the meat and juices will be cooked again the next day in another dish. I always heard it should be refridgerated after 2 hours and not left to stand at room temperature.

If that carcass hits the danger zone between 40 and 140, irrespective of the number of times it's been cooked, it will begin incubating bacteria. Doubly so since you have a nice liquid broth ready to catch and feed them

Poultry and fish are two areas in particular where I would really rather not take chances, particularly if there are very young or very old people in the picture. No disrespect intended, but it just isn't worth the risk.

Best wishes!

NO!!! If u left it out overnight, throw it out. It doesn't matter how many times it was cooked! It's still a cooked food item, that should have been put in frig & it wasn't! My standard rule is that I leave food items out long enough to reach room temperature or close enough, if bed time follows soon after, then put it in frig. If, for some unforseen reason, one of u forgot to put any food item in frig & it sat out all night long, throw it away! Even thought u MAY be fine eating it, if u put it under microscope, u would c all the e-coli & bactoria forming---not a pretty site! Tell ur husband to stomach that next time he want's to eat food left out over night! lol!! ZETA!!!

It is soooo not safe. It can be left out at room temperature for a maximum of two hours. And it should only be reheated once. After that, eat it cold or throw it out. Turkey and chicken are the two worst meats to leave out for too long, or to reheat etc.

The original Pseudomonas and Salmonella have probably been pretty well subdued, but lots of bugs can grow overnight. If your third warming gets it to 160 degrees for a while, you'll have some fairly safe leather. Stick it in the fridge.

I have left our poultry out over night and we didn't die. I think as long as it is not hot in your house, it will be alright. But it is true about the 2 hour rule. But don't forget the five second rule either!
