A timbale is like a little mold you put the salmon and asparagus mixture into, chill it, and then turn it out onto a dish so it takes the shape of the mold.

A Timbale is a round mould with straight or sloping sides made from fireproof china or tinned copper used for moulding meat or fish mixtures. Moulds for hot timbale are lined with macaroni, potato, pastry or raspings (browned breadcrumbs used for coating ham or lining timbales. Made by baking stale bread until crisp and brown then crushed into crumbs.) and cold moulds are usually lined with aspic and decorated. Dishes cooked in the moulds are usually given the name 'timbale'. They are a good way of using left over meat, fish, vegetables, etc.
In this case the ingredients are salmon and asparagus, probably made as a cold dish with aspic jelly.
