Depends on which airports you are flying from/to. For example a flight from most places in London to Tunis is 2 hours and 50 mins. If you take the flight further down to Monastir it becomes a 3 hour flight.
And flight time also depends on delays at the airports, if you are taking a direct flight or one with layovers and how busy the "skyway" is. If there is a lot of traffic in the sky you will have a longer flight. If the sky is not so busy, your flight will be shorter because they allow "short-cuts". (Planes follow flight paths that are similar to driving in highways). The sky is usually emptier at nights and early mornings so that is when you will make the best times.
Here's the site for TunisAir (it's in French, but pretty easy to navigate) and it'll give you exact times for all flights. http://www.tunisair.com/publish/home.asp

I went 3 weeks ago. It took 2 hours 45 minutes going out and 2 hours 30 minutes on the way back. So I'd say between 2.5 to 3 hours is a good estimate. That was from Gatwick to Monastir.
