Chili Rubbed Rotisserie Prime Rib

Ingredients
1 whole boneless prime rib (12 to 15 pounds)
2 cups Creole spice blend

Instructions
Begin by cleaning the whole prime rib thoroughly. Pat dry, then rub well on all sides with the creole blend.

Allow the meat to sit for at least 1 hour.

Place the prime rib on an electric rotisserie on medium heat. Cook to an internal temperature of 135 degrees F, then remove.

Allow the meat to rest for at least 30 minutes before cutting.

Rotisserie Prime Rib Roast


Marinade
2 cups red wine
1 cup red wine vinegar
1/3 cup olive oil
5 tsp. dried rosemary
7 cloves garlic, crushed
3 tsp. dried thyme
3 bay leafs
2 tsp. fresh green peppercorns
2 tsp. pepper
3 lbs. prime standing rib roast
Meat thermometer

Black Rub
1 1/2 Tbsp. coarse-ground black pepper
1/2 Tbsp. kosher salt
6 cups apple wood chips
6 cups cherry wood chips

The night before you barbecue combine marinade ingredients and mix well. Place roast in a sealable plastic bag, pour marinade over it and refrigerate over night.

Remove marinade and place in a drip pan. Place the drip pan in the barbecue over a burner to one side of the grill. Leave this side off. Turn the far burner, not under the drip pan, to high. Leave the roast resting a room temperature for 30 minutes.

Place 2 cups of apple wood chips in water to soak for 30 minutes. Do the same with 2 cups of cherry wood chips.

Rub the roast with the coarse ground peppercorns. Put the roast on the rotisserie spit and secure into place.

Make two smoke packages - one with apple wood chips and the other with cherry wood chips. Each package should contain a mixture of 1 cup of soaked chips with the excess water squeezed out and 2 cups of dry wood chips. Using a fork poke holes on both sides of each package. Place the packages directly over the heat source.


Just prior to putting roast in place, season with salt. Place rotisserie onto grill and leave to roast for 2- 2 1/2 hours or until the internal temperature is 140°F.After 1 hour replace the smoke packages with freshly made sacks.

Remove the finished roast from grill and let stand for 10 minutes before carving.

Serve and enjoy!

6 to 8 bone Prime Rib roast, a paste of 4 tbsp kosher salt, 2 tbsp thyme, 2 tbsp course black pepper, 1/2 cup prepared horseradish, and 1/4 olive oil. Rub the fatty side and the ends of the roast with this paste. Then put the roast on the rotisserie forks.

We use a large propane grill with a rotisserie. Put a roasting pan down to catch the drippings and heat to 500 degrees.

Put the roast on... and immediately lower the temperature to 325 and cook until the roasts internal temperature is 120 for RARE (about 45-50 minutes). You'd have to consult a cookbook to get exact times

I usually dont cook in a Rotisserie, but i have a pretty good Idea !Take your Prime Rib and remove Fat and the Bone. Make a dry Rub (Spices, Herbs, Olive Oil and Garlic) and basically marinate it like Overnite. Get your Oven really Hot so the Meat get's "flashed" (carmelized) when you put it in. Turn down the Temperature after about 15 Minutes (350) and cook accordingly, pending on size of the Meat and the way you like it .
Make Potato-Gratin with sweet and regular Potatoes baked in a Casserole, green Beans and creamy Horseradish. Enjoy

If I were you, I'd cut slits all over the roast and stuff garlic cloves in there. Then, I'd massage it with olive oil and season it with seasoned salt, black pepper, and Mrs.Dash. You can also go to McCormick's website and I bet they can give you a GREAT recipe. You can also find good ones on the foodtv.com, recipezaar.com and allrecipes.com websites.too. properly i understand this question for genuine because i like to cook,position your roast in a deep pan,upload peeled potatoes cut back in 0.5,carrorts,sliced onions,season it up reliable with Mrs.sprint fantastically spiced blend,upload about 1cup of water to it,conceal this and position on your oven at 350 for type of one million a million/2 to 2 hours and make constructive it does no longer go dry and this often is the most comfortable roast you've eaten.Use your dripping for your gravy,it really is going to be some fairly reliable gravy in case you already know a thanks to make it,corn startch is more desirable ideal than flour,it do not lump up.appreciate and devour a chew for me,yummy,John
