What do I need to make a good/basic vegetable broth for soups?

You can boil a whole variety of veggies in a kettle of lightly salted boiling water if you want a meatless broth. Make sure to include onions and celery and favorite seasonings. If you want a clear broth strain out the veggies and eat or discard.

I would start with the basics like onion, celery, and carrot. One way to get some really good flavors, is to small dice your veg and then saute it on high until they start to brown a little, then use a little white wine to deglaze the pan, and let it reduce. Then add your water, and let it simmer on low until you get a good flavor, usually a few hours. Anyway, you could strain and use as a broth, or better yet just add some ingredients and make a really good soup. Good luck, and happy eating.
