Crockpot Bratwurst and Peppers
6 fresh bratwursts (preferably Johnsonville brand)
1 tablespoon butter
1 red bell pepper, sliced in strips
1 yellow bell pepper, sliced in strips
1 green bell pepper, sliced in strips
1 sweet onion, sliced and quartered
1 apple, halved and sliced (Granny Smith works well)
36 ounces beer
Hoagie rolls
Lightly brown bratwursts in butter.
Layer one half of the bell peppers, onion and apple in the bottom of the crockpot.
Place 3 bratwursts on top.
Repeat with remaining veggies and bratwurst.
Pour beer over all.
Cook on high for 1- 2 hours.
Turn to low and cook at least 4 more hours.
Serve brat and pepper mixture on rolls with mustard or favorite condiment.
Excellent with sour kraut and German potato salad.

I'm not sure if you've had Johnsonville Brats before, but I really don't care for them at all. They taste NOTHING like real brats. Rather, they taste like giant breakfast sausages. Yuck!
I second the motion that they should still never be cooked in a crock, rather a grill.

Honey&Mustard Brats
10 fresh bratwurst sausages
1 green bell pepper, sliced into long strips
1 red bell pepper, sliced into long strips
1 large sweet onion, sliced into rings and separated
2 cloves garlic, sliced
2 bay leaves
1 teaspoon liquid smoke flavoring
2 cups honey mustard barbecue sauce
1 (12 fluid ounce) can beer, or as needed
10 hoagie rolls, split lengthwise
Place half of the bratwurst in the bottom of a 5 quart slow cooker. Arrange half of the green pepper, red pepper, and onion over them. Layer the remaining bratwurst over the top, and top with the remaining red and green bell peppers and onion. Throw in the garlic and bay leaves. In a separate bowl, mix together the honey mustard sauce, liquid smoke and beer. Pour into the slow cooker. Add more beer if necessary to cover everything in the pot. Cover, and cook on Low for 4 to 5 hours. .Remove bratwurst from the slow cooker, but leave onions and peppers inside. Place bratwurst on rolls, and use tongs to pull out a few of the onions and peppers from the slow cooker and drape them over the sausage.

Don't cook them in a crock pot... you'll ruin them! soak em in some beer and throw them on the grill.... if you want cheese melt it over when finished cooking. Serve with some waffle fries and salad.

Good answers !! Brats in beer are classic... though I think the brat's have enough fat to not need cheese.

there are a lot of brats in my neighborhood, always speaking in Spanish and such. I would recommend carving up the meatiest, tenderest parts and stewing them all day, maybe with some carrots, potatoes, and fresh rosemary.
