Well, a mimosa is champagne and orange juice. I would serve a cheesy snack like blue cheese dip or a sharp cheese ball. You want the sharpness of the cheese to counteract the sweetness of the drink. Roasted salted nuts, peas, garbanzos or soybeans would be good. So would anything wrapped in bacon. Think salty and strongly flavored, that will go well with a sweet cocktail.

Mimosa is a brunch/breakfast drink.. so any brunch or breakfast foods should work. In the event that you can't cook.. try frozen waffels... or french toast... something of that nature.. anything you would normally have with Orange Juice.. you would have with a mimosa.

When I think of mimosas, Brunch comes to mind. Maybe some quiches, omelets, " breakfast finger sandwiches" (like maybe make some ham and egg/cheese croissants and make them bite size), pastries like cheese rolls and danishes. Just a thought...
