Tostones con Mojo (Fried Plantains w/ dipping sauce)
2 large green plantains
1/2 cup vegetable oil or olive oil
1 tablespoon adobo seasoning or salt
1/2 cup ketchup
1/2 cup mayonnaise
In a skillet heat 1/2 cup of oil.
Peel skin off plantain by making a surface cut lengthwise and peeling to the sides (plantains can be tricky to peel).
Cut the plaintain in diagonal wheels about 1/2 inch thick.
Make sure oil is sizzling, fry plantains turning once for about 5 minutes (2-1/2 minutes each side).
Remove plaintains from oil.
Pat dry plantains, flatten each wheel (use a piece of wax paper folded for thickness) and sprinkle with Adobo or salt.
Refry plantains until golden and crispy.
For the"Mojo" combine ketchup and mayonnaise together in a small dish.
Serve plantains hot.
Makes a great side dish.

I am not sure about the dipping sauce but fried plantains are delicious! If you want a sweet plantain, look for a plantain that is dark brown or black in color. It shouldn't be too mushy and it shouldn't be too firm (somewhere in between is good). To peel the plantain, cut off the top and the bottom ends and make a cut (just through the skin) all the way down the plantain. You can cut them into quarters lengthwise and fry them in vegetable oil or any oil with a high smoking point(not olive oil). There is no need to bread them or anything because the high level of natural starch and sugar in the plantain will create a golden brown color. Plantains are usually served as a side dish to accompany a main course like a beef or chicken dish. Plantains have many delicious ways that they can be prepared.

My fave plaintain recipe is Mashed Plantains. It's like mashed potatoes only with plantains. It's just as good and it has less carbs!

Slit the skins of the plantains from end to end to vent them for microwave cooking. Wrap them each in wax paper, twisting up paper at ends. Microwave the plantains 4 to 5 minutes together or 90 seconds each individually on high.
Peel and mash the steaming hot plantains with 1/2 cup chicken stock and a drizzle of extra-virgin olive oil. Season the plantains with salt and pile on platter or dinner plates.

Frying plaintain is very simple.
2 ripe plaintain (look for plaintain w/brown or excessively brown spotted skin)
1/8 - 1/4 cup Vegetable oil
Get two ripe plaintain, peel them and slice, crosswise at an angle, to desired thickness. (I like mine relatively thin and tend to slice them no more than about 1/4" thick) Using 2 tbs - 1/4 cup of vegetable oil, (if using a nonstick skillet, you don't have to use as much oil). Heat skillet, add oil, then add slices of plaintain in a single layer. Fry until they start to brown and turn. Fry the other side; remove from oil, and drain on paper towels or brown paper bag will also work. Serve.
