I sautee the onions and bell peppers a finely diced japaleno and fresh garlic in olive oil first. That infuses the flavors. Then instead of hamburger meat, I use ground pork and italian sausage. Allot of fresh ground pepper, basil, oregano and a little garlic powder. I salt using Kosher salt only. Add your paste and tomatoe sauce and diced tomatoes and its amazing!!!

Italian sausage, ground beef, onions and garlic, oregano, basil, and 3 Bay Leaves, red-wine (burgundy), tomato paste, tomato sauce, crushed tomatoes, brown sugar, red-pepper flakes...

some times I'll add mushrooms or green olives.

I make a puree of onions and green peppers (and sometimes mushrooms), then place a pat of butter in a nonstick skillet, add the puree, and cook out some of the liquid, adding good flavor and caramelization before adding it to the sauce.

I like to put *this may be too crazy for ya* red pepper flakes in my spaghetti sauce. *Gasp!* Onions are good fresh or as a spice, and for other spices, oregano is a goody.

I put a tablespoon of sugar. I also tried a tsp of cinammon and it actually was awesome! Sounds bad, but tasted good!

How about green peppers?

Put a whole carrot in while cooking and take it out before serving...it cuts the acidity and adds sweetness.
