Tough one. Learn the basics and hope for the best.
It probably helps if you watch German movies (Blockbuster has some german movies .. ), German radio programs (real player has international ronline radio stations) and such .. just to get a feel for the language.
Most of Germans speak English to some extend since everybody is required to learn it in school. As long as you approach them in German and ask politely (in German) if they speak English, most of them don't mind.
As for Austria .. i think even if you manged to learn German until January, you probably still won't be able to understand the dialect. German is my native language and I have problems with the Austrian accent. Same goes for Switzerland. And again, most people understand and speak English.
As long as you try it first in the local language, most people won't mind.
Italian .. i don't know ..
good luck and have fun in Europe

in that short of a period, I doubt you will learn enough to be able to function in all three languages without resorting to English. You won't have a real vocabulary, pronunciation will probably be off and if you memorize phrases, as soon as anyone says anything back to you that's not in the book you won't understand. So I'd recommend you learn the very basics as best as you can before you go because it's polite and it's fun.

There are several companies offering language programs you run on your computer.
The thing is, you probably can't learn all three languages sufficiently to use them better than the Europeans speak English. Thus, what you really want to do is learn enough of the languages to show you've made an effort.
Make sure you learn the basics -- hello, goodbye, foods, simple directions. And learn the phrase, "My is very poor. Please speak slowly" in each language.
