I have a few questions:

- Tournament or cash game?
- Online, casino or home game?
- Read on your opponent?
- Percentage of your stack to call?
- Rebuy option available?
- How big is the pot, how much did you put in?
- How has this player been playing up to this point in the hand and the game?

But in the absence of answers to these questions, I think I would have to suggest you call. The only hand that beats you is a better boat, quads or a straight flush. It is quite possible that he has a very nice flush, and this is probably the most likely guess at his hand. To have a straight flush he would have to have two other specific cards hidden to make it. This is a really unlikely scenario.

I think you mean Seven card stud (what does Santa have to do with this)?....with a full house (a/k/a "boat") - you're only beaten by quads or a straight flush. Just because he's showing 3 diamonds to straight-flush - it doesn't mean he has the other 2 cards he needs. Maybe he just has a straight or just has a flush - 2 big hands - and he's betting them big - and he's hoping to scare you with the possible straight flush. Bottom line is that a full-house is a very, very good hand - you need to call his all-in. If he has the straight flush - well - you're just going to pay him off - but he probably doesn't & you should take down a big pot.
