Mini-Quiches
Ingredients
8 oz Cottage cheese-small curd
1/4 c Sour cream
4 oz Shredded sharp cheddar cheese
1/2 c Bisquick (I used RecipEase)
1/4 c Melted butter
3 Eggs
Preheat oven to 350 degrees. Mix all ingredients with
Electric mixer. Grease mini-muffin tins or use Teflon ones.
Fill 3/4 full. Bake for 15-20 minutes or until brown.
Hints: Add onion, bacon, mushrooms,etc. May be frozen.
Reheat at 300 degrees or microwave for 3 minutes on high.
Note: These are great! Be sure to add cooked bacon and
Some diced onion. This recipe only makes about
1 1/2 Dozen so be sure to at least double! Great

Asparagus wrapped in Prosciutto and sprinkled with Parmesan cheese.
Partly cook the asparagus
Wrap in Prosciutto
Sprinkle well with Parmesan
Bake for about 5 minutes at 350F or until cheese is lightly melted and slightly browned
Hot Crab & Shrimp Dip
look for recipes on line, should be creamy and a little cheesy
Serve with nacho chips, crackers, or toast rounds
Crescent Rolls stuffed with chicken, salsa, and cheese
Get the pre-made dough
Put a small dollop of diced cooked chicken into center of a croissant triangle
Put a small dollop of salsa on top of that
Add a pinch or two of shredded Mex blend cheese
Form a more or less triangular pouch around the filling, sealing the edges. This may be partly an exercise in rolling things up and/or pinching edges
If you put too much in, you won't be able to seal the edges.
Bake per directions for croissants

French Bread Pizza
Ingredients
red pepper finely chopped
green pepper finely chopped
yellow pepper finely chopped
onion finely chopped
mushrooms thiny sliced
sun-dried tomato paste
pizza sauce
vegetable oil
french baton
Slice a French Baton in half and slice each half through long ways.
Preheat an oven to 200 degrees.
Fry the onion on some oil until soft. Then make up the pizza. Firstly spread it with sun-dried tomato paste. Then add a layer of pizza sauce (I often use pasta sauce instead).
Sprinkle some onion on top. Then spread over some mushrooms. Sprinkle over some peppers.
Bake in the oven for 10 minutes.

I love this recipe. You get the pillsbury pie dough from the dairy section. You need a mini muffin pan and a small biscuit cutter. Cut the circles out of the dough in 1 inch diameter until all the dough is cut. Stuff them in the mini pan for shells. For the filling, you use fresh spinish (sautee in a frying pan with a little oil until cooked and tender), feta cheese, and ricotta (a tomato basil feta is good!). Bake at 375 for 10 minutes (I think!) KEEP AN EYE ON THEM (I don't have the time and temp in front of me). They are DELICIOUS! Just bake until the top and crust is golden!

Smoked Salmon and Herbed Cheese - Easy, fast, healthy, prep ahead, and no cooking!
Slice cucumbers (on the angle if you want to be fancy, or you can cut strips down the side into the skin for a pretty look)
On each slice put a spoonful of Boursin cheese (garlic & herb is best)
Then top each off with a small roll of smoked salmon.
I always make these for parties... they get rave reviews, everyone is always asking me for the recipe, and I don't have to panic about getting them ready on time. :)

I really like Chicken Fingers with Honey Mustard
4 skinless, boneless chicken breasts
1 c. flour
1/2 tsp. salt
1/4 tsp pepper
3/4 c. milk
1 c. vegetable oil
1/2 c. honey
1/4 c. dijon mustard
Cut the chicken into 1/2 x2" strips
Mix flour, salt & pepper in a shallow bowl. Dip chicken in milk. Roll in flour mixture to coat well. Place chicken on waxed paper.
Pour 1/4 inch of oil into a large, heavy skillet. Heat to 350, or until a cube of white bread browns evenly in 1 minute.
Divide chicken into batches. Place an even layer of chicken in hot oil. Fry, turning once, for about 3 minutes on each side, or until golden brown and crisp. drain on paper towels.
Sauce:
Mix honey and dijon mustard. It is recommended to make the sauce 1-2 days in advance so the flavors blend well.

Proscuito Wrapped Breadsticks
Toss your favorite nut mix in a bowl with your favorite dried or fresh herbs and just enough butter to coat and then warm in oven
Home made salsa then on the last couple of pulses add cilantro to taste. Pour all in a serving bowl around a hunk of cream cheese! YUM serve with chips or bread

Ham rollups!
Buy Plumrose sliced ham. It's good quality (not that sandwich stuff), and will stand the stress.
Spread each piece of ham with room temperature cream chesse. Place 1/2 of a green onion (longwise) and roll into something that resembles a ham-cigar. Do not attempt to smoke.
Chill.
Slice into 1" pieces and stand on end for a "sushi" appearance. Delicious, pretty, simple, and I guarantee, not one will be left!

A good finger food is this. Get a loaf of party rye, mix an envelope of ranch dressing mix and cream cheese, spread it onto the slices of the party rye, and put a cucumber slice on top.

My family request these every year.
Uncooked bacon slices cut in half
whole water chestnuts (found by the chow mein noodles)
1 cup ketchup
1 cup white sugar
Wrap 1 water chestnut with 1 slice of bacon, secure with toothpick, bake on broiler pan until bacon is done. Mix the ketchup and sugar and pour over the chestnuts. I place my chestnuts in a slow cooker and pour the sauce over them. It sounds a little strange but they are very addicting.
