Can Splenda be used as an alternative to white sugar when baking my traditional holiday cookies? If my recipe say 1 1/2 cups of sugar do I use 1 1/2 cups of Splenda baking sugar?

Yes, substitute an equal measure of Splenda for sugar. Bless you for thinking of your friends' special needs, however, don't expec them to go overboard eating your Spenda-sweetened cookies - we diabetics have to count carbs, not just sugar (altho sugar is also a carb), so we still have to limit our intake of cookies because of the other carbs they contain. If I came to your house to sample your wonderful cookies, I'd probably be able to eat three of them instead of two...and I'd thank you profusely for being so considerate of folks with diabetes. You are a good person!

My dad was diabetic, and my sister used to bake him all kinds of things using the old saccharin. That was not the same ratio. I'd read the instructions on the Splenda box, or call the 1-800 number on the box. Good luck, God Bless and Merry Christmas.

You might want to bump it up by maybe a quarter of a cup. The things I have made needed a bit more Splenda.

I made pecan pies with Splenda and sugar free syrup for Thanksgiving, they came out great.

Also, since you say these are for your holiday cookies, just a word of caution:

PLEASE tell anyone who may eat them that there is Splenda in the cookies...people do have allergies to it. I am allergic to it and I have eaten things before with Splenda because the person didn't tell me, and it's not good.

I use splenda instead of sugar and have diabetic relations who eat splenda. I have been using the same amount of splenda as I would sugar and they taste fine. I have been using it fr the biscuit recipes on here : http://www.recipesforvegans.co.uk/baking.html
