I heard that they're able to grill delicate cuts over an open flame? Has anyone out there heard about this?

I've heard of them wrapping the fish in banana leaves and then grilling it.

Common_Se (answerer) is right. I live in the Caribbean and the fish is wrapped in banana leaves. The leaves are soaked in water and then briefly placed on the grill to soften them so they don't crack when used to wrap the fish. The fish is seasoned to your own liking then wrapped in the leaves and placed on the grill for about ten minutes. Grill fire should be medium to low. The finished dish is absolutely delicious.
