My Veg-O-Matic is finnaly getting wearing out!
I may just have to buy another one..it's been so faithful over the years.

A mandolin works great....my veg-o-matic wore out not to long ago and the mandolin is much easier also

Potatoes don't particularly care if they are uniform or not. Restaurants use the press device to push a lot of potatoes through really fast, but they really don't require to be uniform for the rest of us. I use the boning knife to cut the potatoes to whatever size I wish to fry, whether it is french fries or sliced for home fries or even in wedges. Yes, I have a potato cutter, but it is much more trouble than it is worth, too much time cleaning for just a few potatoes.

I use an apple peeler from OSH. My kids love it. just drive the potatoes all the way thru it. hit with a knife and you can have chips or fries in no time.

A good sharp knife makes easy work of slicing. No need for expensive equipment that takes up a lot of room on the counter or cupboard, and that you rarely use.

hmmmm to tell you the truth i have never used one before, i usually use a cutting board and a knife. still get nice straight fries . good luck
