Get a large pot. Fill it with about 2 inches of water. Add Old Bay Seasoning, bring it to a boil, add the live crabs and cover. When they turn red, they are done (about 8-10 min).

Instead of the Old Bay, you can use four bay leaves, two Tbls whole black peppercorns, one teas. crushed red pepper flakes, and 2 teas. celery seed.

When you cook blue crabs, it is critical that the crab meat reach an internal temperature of 70 degrees C (158 degrees F) for at least one minute to insure the destruction of the bacteria Vibrio cholerae, which may contaminate blue crabs. For safety, steam the crabs for 25-30 minutes or boil them for approximately 15 minutes. Either method is effective.

sprinkle with previous Bay, or Zataran's or slightly curry powder as quickly as they're positioned into the steamer. prepare dinner above the boiling water for 10-quarter-hour max and do away with in any different case they'll proceed cooking and get comfortable (yuk). in case you have a great pot of crabs attempt 20 minutes taking into consideration that the decrease crabs would be surprisingly plenty cooked collectively as the better crabs are proper. for this reason, do 2 batches rather of a huge batch except you're serving and military.

Tater's got it dead on. Do it his way and you'll have perfect blues. They suck to pick. I catch them in July and August in New Jersey.
