Jamie Oliver plans to make a new TV show about eating road-kill.
Delicacies include badger meat balls, roasted duck and wild squirrel stew, and other dishes made of animals that were killed on the roads.

The only road kill of which I have any experience is pheasant.

assuming it has been hit - not run over.

1) Stop car before you reach the pheasant.

2) check there is no traffice behind.

3) Using car as protection, go and pick up pheasant. If you fancy the look of it return to car, with the bird and drop it in passenger footwell, preferably on top of a newspaper.

4) take it home and hang it for shorter than usual.

5) Have newspaper ready. Cut off the head, using a very sharp knife. Make an incision at the base of the abdomen. Wearing rubber gloves, draw the bird - grab all the guts and pull them out in one go. Drop them straight on to a newspaper.

6) Starting at the incision, peel back the skin with feathers still attached. It's a bit like peeling off tight fitting clothes.

7)Remove the unusable part of the wings and legs using seccateurs.

8) Joint it much as you would any poultry, throwing away any bits that have impact damage you don't like the look of. And casserole with plenty of tasty veggies

I'm serious about the first few steps. Only pick up a bird if there is good visibility in both directions. Use your own car to protect you while you're on the road.

Some states allow you to keep a deer if you hit one with your car. Considering that you have probably really messed up your car with the impact at least it's some compensation. Take the deer to a good butcher to have it dressed out and cut up into chops, steaks, roasts, stew meat, etc.

In our area there is alot of Pheasant running loose when it is season time. They all seem to have a death wish, just wont move at all when in the road. If they are not shot by game hunters then they usually get run over, and its not uncommon for the driver to retrieve the dead game to take home and cook.

it has to be deer makes a lovely stew and a great pot off soup in fact i have a piece defrosting right now going to cook it to- morrow.
