Does anyone know how to change the date in the properties of a digital photo to another date?

You should be able to use Opanda (www.opanda.com) to change the EXIF data. The program isn't free, but is not too expensive.

You can edit the metadata in the latest versions of photoshop, but I'm not sure if it keeps the original data as well.

Do you mean the exif information? If so, I don't think you can.
