Garlic, salt, a little cooking sherry, and chicken broth (or stock).
For one box of pasta use:
1/2 teaspoon salt
2-3 cloves of garlic,
one medium-large size onion,
1/4 cup of cooking sherry,
1/4 of chicken broth,
and add enough double cream to give the sauce the consistency you are looking for.
Frying some bacon with the onions would give it delicious flavor as well. If the chicken broth has high sodium content you can skip the extra salt.

Its not its delicious, apart from when I make it I do it with red onion & melt some soft cheese for the sauce instead of double cream so it tastes slightly cheesy.
You could add some garlic and/or herbs to stir things up a bit.
Whatever you do don't wash the mushrooms, they soak up water like a sponge. Better just to peel them if they're dirty looking!

Try this recipe:
Put pasta on to boil
Dry fry some chopped bacon (if you're a meat eater)
Just before it's ready add sliced chestnut mushrooms and ground nutmeg
When pasta is ready, add bacon and mushrooms to pasta and stir in single cream over low heat
Sprinkle with parmesan cheese

Use mushrooms such as shitaake or morels. They have more flavour.
The secret to good cooking is to let the flavours speak for themselves. A mushroom dish should taste of mushrooms.
A little salt and olive oil perhaps.

A tiny amount of nutmeg or some lovage are spice the mushrooms. Or alternatively some ham or bacon.
P.S if your vegetarian pick the meat out and stop being so fussy.

you are right to think of perking up the dish,how about plenty of grated cheese or chopped herbs of your taste.Pinch of powdered spice can be mixed into the double cream like mustard,pepper ,chille powder if you would like it spicy.Sauces mixed in would also add zest to the dish,tomato ,soy,or a combination.
