It depends on the size of the business I think.Maybe none of the groups applied for jobs in those places.Perhaps a ethnic restaurant attracts people of the ethnicity.I have seen a black cook(he was not Hispanic) in a Mexican restaurant. Interesting question .I'm not sure it has anything to do with immigration but interesting none the less.

We had a Chinese food place on campus when I was in college and there were only Black people working there.

Yes I see it all the time. I've noticed a decrease in the quality of the food too. I try to go the more high end restaurants now.

Actually not only have seen it, but there is a chinese restaruant 5 minutes walk from my apartment that has a help wanted sign in spanish (know enough spanish to read it) that asks they speak a little english.

No but my husband is a bartender in an Italian restaurant and all of their chefs, including the pizza guy are Mexican.

Yes I have. I've seen them as bus boys and waiters and waitresses. I live in a large city in TX.
