the wax provides an impermeable outer covering ,it prevents air from getting to the cheese,so that moisture,taste & flavour are sealed in ,besides it does not in any way effect the quality of the product .

besides preserving it, i guess it can the packaging.Australia cheese has different colour of wax outside the cheese red , blue etc..

I just seen this on dirty jobs...they coat it with wax so that air cannot get to the cheese so it wont grow mold.... its not an ingredient it is just a last process to store thing.....

It protects it, holds it together, keeps it fresh, is easy to remove, is traditional, and is completely airtight and watertight.
And to teach greedy young children a lesson when they start stealing snacks from the cupboard because they think it's edible.

i always assumed to keep is fresh and soft, but why wax? why not another type of container, bag, etc.... good question!
