What are the rules on carrying alcohol NOT in your carry-on bags, and are you likely to be caught with alcohol if you do not bring them in your carry-on bags but put them in your bags to be put in the cargo hold?

You can check wine and liquor on flights if that's what you're talking about. You just want to pack it well so bottles don't break. Restrictions would come on carrying liquor from one country to another. You'd have to check with Customs for the country you're visiting to see about that.
