A good quality balsamic vinegar is lovely on nearly everything. You can also simmer it down to a syrupy consistency and use it as a glaze. Just be sure to open your windows. The fumes it gives off are rather strong.

Fat free italian dressing is another good option. It's one of the few fat free products I like. It tends to be so highly seasoned, you can't tell it's fat free.

Soy sauce and teriyaki sauce also add a lot of flavor for very few calories and no fat. You can also combine any fruit juice you like with a bit of dry, white wine (optional), some shallots, any other seasonings you feel would 'go' with the main dish you are preparing and simmer it down until reduced by one third. Simply mix some cornstarch and cold water together and then whisk it into your simmering sauce to thicken. Adjust your seasonings and brush/pour over meat. Instant, easy, homemade sauce. I've even used pomegranite juice in this way and brushed it over chicken I was grilling. It was wonderful.

Use your imagination and stay away from cream sauces. Obviously these are loaded with the fat and calories you're trying to avoid.

One of my best friends is morbidly obese and complains about his weight. Well, since he refuses to do anything about his weight problem, I got sneaky and took matters into my own little hands. I've started cooking for him all the time (pretty much every day, at least one meal), and I cook low fat or fat free. So far, he's not been able to tell, he's eating more than usual and he's losing weight. I'm beginning to think I should hire myself out as a cook for the obese. I'd slim them down, and they wouldn't even know until their pants no longer fit them!

Lemon is good on top most foods... or try mixing a plain yogurt with lemon and some herbs. Good on fish, chicken, pretty much anything.
