Homemade chocolate sponge, with a liquid caramel/chocolate centre, laced with Bailey's Irish caramel liqueur....served with what? Whipped cream or Ice cream help!!!

Whipped cream, and not overly sweetened from the description of the rest of the dish. The center is going to be fairly "heavy" in your mouth, and you don't want the ice cream competing with that.

If the chocolate pud is going to be warm/hot I would always go with a good vanilla ice cream if not go for single or pouring cream. Double or whipped cream is too rich for a pud like that.

Unless you can get Baileys Ice cream I would use cream. As anything else would cover the taste of the Baileys.
