I was going to say, "Do you mean 'Kamakamo', a New Zealand 'squash'?" - then I read your second line.

I've always found it best used in a stew or casserole -with plenty of other flavours for it to absorb. Hollowed out, stuffed with a spicy chilli/curry/spaghetti type meat mixture and rice or noodles is good - par-cook (or completely cook) the filling, then put the whole thing into a pan, fill as high up as possible with water, cover and roast in oven is another way.

The traditional Maori way of cooking here in Aotearoa/NZ essentially steamed it. You can do this or boil it, but it is a bit bland on its own. You can do the stuffed one in a covered pot and boil it, as well.

Generally treat like a pumpkin or marrow.

kumi Kumi is however an illegal liquor brewed in Kenya from sorghum, maize or millet.
