Both wine and cheese have strong flavors, and strong flavored foods match well with other strong flavors. For example, you would not put a heavy BBQ sauce on fish.

Also, wine is acidic and sometimes sweet. The salt in the cheese clears the acidic taste from your mouth. Acids and salts are another common taste combination.

For cheese lovers, there is the added benefit that wines (particularly red wines) "cut" the fat in the cheese. The acid cleanses the mouth of the fatty residue from cheese (I know that description is not too appetizing).

Many people observe that wine "cuts" through the flavor of cheese. This is literally true. Cheese is made out of milk curds, which are long, tightly wound up strands of milk protein that are hard to digest. Both the alcholog and the acid in the wine causes these strands to break apart into smaller strands. As a result, wine aids in the digestion of the cheese so that you do not have that heavy, over-filled feeling that you can get from eating cheese. In fact, this very reason is why beer or wine is used as a base in cheese sauces and fondues. By breaking the protein strands, you get a smoother sauce.

From a health point of view, cheese is certainly not a health food because of the saturated fat content. However, wine (especially red) is a blood thinner that helps counteract some of the health problems of eating cheese. This is one reason why the French, who have a high fat diet, are generally heart health. The Mediterranean diet followed in Italy, in which people eat a lot of cheese but also drink a lot of wine, is considered very healthy.

This is a good question. My guess would be because of Acid content in the wine. Personally I like dry wine and aged cheese together.

We just had a wine party last night and aged cheese goes well with wine do to the fact that the tannins are neutralized by the age and sharpness of the cheese. Normally, you couldn't just take a hunk of parmasean, and enjoy it, but with a dry Amerone(Italy) it seems to go down just perfect. Same thing with strawberries and champangne or espresso and biscotti.

Because they cheese gives thirsty and then you will like to drink wine, there are some wines which are more suit than others if you drink a suit wine then you might want to eat something salty

I am sure it has something to do with chemistry. The fat in the cheese, and the alcohol in the wine combine to produce a protein your body naturally craves.

Not sure but there is a great book on matching wine with meals (also desserts, cheeses, etc.). Book also has history - I can attest for the book (friend's website and book was a present that we use).
