I know you get fresh milk. I don't think any you get at the store is fresh enough. You need a milk cow. So you get that and you add a rennet tablet (I think that's what it's called. I don't know where to get it. Or maybe some other type of enzyme.) and let it sit for a few hours until the curds and whey separate. Then you gather the curds and squeeze the whey out. That's cheese. You get different varities by the type of milk used (different animals make different cheese), how long it's aged, what kinds of molds get to it, and what you season it with.
