Basically Stainless steel has the same make up as Mild Steel with the basic additions of Nickel and Chromium. Of course this means there is a drop in Carbon content and a few other minor elements. Basically 200, 300 and some 400 series are Austentic. 430 Stainless ( ferritic) is magnetic. As well, most grades of stainless will become slightly magnetic after excessive punching or working.

The addition of nickel makes stainless steel non-magnetic. There is a good discussion in Wikipedia, Go about half way down the page:

I don't know, being only a volunteer layabout on a beach when the weather is nice. But I'll guess that they dilute the steel with chromium enough that the alloy lacks the density of ferromagnetic metal to draw a magnet.
