Eggs cooked in Bagels (My boyfriends loves it!!)
Preheat Oven to 350
Take Bagels (Try pizza or cheese bagels) and brush on melted butter to the cut side, lie that side down on a cookie sheet. Crack open a small egg and gently pour it into the little whole that is in the middle of the bagel. Continue as needed for how many you are serving and cook for 10 - 20 minutes. My oven is kinda goofy, so just check it to make sure that the bagel is crisp and the egg is cooked. You can also throw on a slice of cheese on top 1/2 thru, and cook up some sausage and bacon on the side or to put in between the two bagel halfs like my boyfriend loves to do!

Mexican Breakfast Tacos
6 ounces chorizo sausage
8 (6 inch) corn tortillas
6 eggs
1/4 cup milk
1/2 teaspoon pepper
1/2 teaspoon salt
1 cup shredded Monterey Jack cheese
1 dash hot pepper sauce (e.g. Tabascoâ¢), or to taste
1/2 cup salsa
DIRECTIONS
Crumble the sausage into a skillet over medium-high heat. Cook and stir until evenly brown. Set aside.
Heat one skillet over medium heat, and heat another skillet over high heat. The skillet over high heat is for warming tortillas. In a medium bowl, whisk together the eggs, milk, salt and pepper. Spray the medium heat skillet with some cooking spray, and pour in the eggs. Cook and stir until almost firm. Add the sausage, and continue cooking and stirring until firm.
Meanwhile, warm tortillas for about 45 seconds per side in the other skillet, so they are hot and crispy on the edges, but still pliable.
Sprinkle a little shredded cheese onto each tortilla while it is still hot. Top with some of the scrambled egg and sausage, then add hot pepper sauce and salsa to your liking.

apples and cheese w/ some ham or turkey slices - yes for breakfast
"Eggie bread" - just like french toast, but with extra eggs (I use 4 eggs with a 'splash' of milk), use whole wheat or a grain bread, not good with white bread. - use syrup or flavored cream cheese. - I make this for my kids, but I end up eating some every time b/c it's yummy! ....(don't forget the cinnamon, nutmeg, and a dash of vanilla)
Not healthy but YUM: potatoe cakes - make instant mashed potatoes (a little stiff), add some crumbled bacon or sausage or ham, green onions and fry in butter or olive oil....

I do not do "Breakfast"
I like *Fresh Fruit(apple, pear, blueberries) with String Cheese ~very portable
*Nuts, Almonds are excellant with Fresh Fruit
*Yogurt topped with Granola or trail mix.
*Cottage Cheese with can fruit or fresh fruit chopped up.
*Turkey Jerky, with cheese crackers(fish ones are great) & fruit.
*Frozen Waffles(toaster) with nut butter(almond, cashew, peanut) & fruit sweetened jelly
Or same thing but a whole grain Bagel.
If I am lounging around home even leftovers from dinner can be great.
