Sort of like a mixer. It spins the attachment around to churn in air. Depending on what kind of icecream machine you have sometimes you have to freeze the bowl or if you have a really nice model it starts to freeze the icecream all by itself.

Mainly the machine needs to both whip the cream and freeze it, and do this in a way that has smooth consistency. The main thing is to constantly stir/blend the cream while freezing it. The freezing temperature is lower than for water, so if you use ice (like in old-fashioned hand-cranked ice cream makers) you need to add salt to the ice (not the cream) to make it melt at a colder temperature.
