I have a bf and I've never brought my bf up in the conversation, so my instructor assumes i'm single, is there any way I can bring my bf up in a subtle way without making it seem like I'm making **** up to get out of the situation. Or can you think of any other relevant excuses?

The problem is that he keeps asking me "as a friend" but it's obvious he wants something more when he says he really likes me and that he thinks I'm gorgeous etc :( I don't want to hurt his feelings but maybe there's no other option?

just say no. . . or idk you could get something out of you purse/wallet and have a picture fall out or right there. . . you couldn't easily make up a picture right. . . or have him call right at the end of you lesson. . . idk but i hope you work it out!

Just tell him. If I were your boyfriend I'd wonder if you may want to go out with him. It shouldn't be that hard to just say, I can't go out with you because I have a boyfriend, and I don't date loser driver instructors, anyway. See how easy that is? So now you have a way out of the situation and an added relevant excuse.

You need to be more explicit. I don't see why do you need to bring up the subject of your bf in a subtle way. I don't see why do you need excuses. You can just say NO THANKS. It's allowed. Or just say you thank you but you have a BF. And yeah, do it before or after you start driving, OK?
