Three (3) days. Around here, we keep wines up to 3 days after the bottle has been opened. Once a bottle of wine is opened, the oxygen in the air starts a process that initially softens the flavors and opens up the aromas of the wine. As this process (oxidation) continues over many hours and days, the wine is ultimately made undrinkable. The trick is to use the wine before it becomes unpalatable or to pour it out before bad wine is served to guests.
Keeping opened wines beyond 3 days is like playing golf in a lightning storm. You may get through but you are tempting the fates. If you keep a table wine for more than 3 days, you will be serving a wine that has lost most of the characteristics that are prized. The aroma will start to change and much of the fresh fruit smells and tastes will subside. At worst, you'll be serving a wine that has oxidized too much and is partly or entirely bad.

My experience is that it seems to depend on the wine.

I've had wine that tastes the same after 3 days and other wine that clearly (after 3 days) is going bad.

I would love a real answer to this question, but I don't think (based on experience) there is one.

My general rule is to drink wine within three days of opening.

My rule applies mainly to rich red wines from the Napa Valley, so maybe other wines are different. I don't drink a lot of white wines for example.

Also, I've tried the gases that you spray in the bottle to help keep wine from oxidizing and I don't know if they really work. I just stick to my 3 day rule and find some wines virtually unchanged while others seem to be going a little bad...

Go figure.

Most of these people are way wrong. As a bartender at a famous high end restaurant, I deal with wine on a daily basis. White wine should be refrigerated, and can last around a week, possibly a little more. Red wine has a shelf life of 3-4 days.

Refrigerated, the wine will still taste palatable for a short time like one week. After that, the chemistry is changed, and the wine becomes vinegar. Bubbly or sparkling wines do not last after they are open since they become flat.

Wine should last for quite some time after it is opened as long as it is chilled and properly corked.

Three days is about right. Red wine does not need to be refrigerated, but white does. If you are just cooking you can use it for months.

Just a few days. It turns into vinegar. If you think I'm lying, open a bottle and take a swig after a week. : /

if you are asking about a bottle, whack the cork back in and it will keep OK for a day or so... so I'm told.

Never really been an issue for me.

WELL CONSIDERING I HAVE HAD A BOX OF ZENFINDEL IN MY FRIDGE SINCE JUNE 2005 AND WHEN I HAVE COMPANY PEOPLE STILL DRINK IT I SAY IT LAST FOREVER THE LONGER THE BETTER BECAUSE THEY BE TIPSY
