im making a beef and cheese quesadilla on the stove
i dont want to mess it up
any ideas on how to make the perfect quesadilla?

Heat a big non-stick skillet on medium heat. Take a big tortilla and spray one side with Pam. Put tortilla (Pam side down) in the hot skillet. Add cheese and cooked beef. Fold over. After one side is lightly browned, flip over to brown other side. If you like it spicy, try sprinkling the outside of the tortilla with chili powder. I also like to spread refried beans to the inside of the tortilla before I add the cheese. Good luck!

Landon's Quesadilla's Recipe Courtesy of Emeril Lagasse





1 avocado, peeled and diced
Juice of one lemon
1 teaspoon minced garlic
Salt and pepper
8 flour tortilla's
1 cup black bean puree
4 ounces Monterey Jack cheese
Olive oil
1/2 cup prepared Salsa
1/2 cup sour cream

Preheat the oven to 400 degrees F. Combine the avocado's, lemon juice and garlic in a mixing bowl. Using a fork, mash the mixture until smooth but still chunky. Season the guacamole with salt and pepper. Spread 1/4 cup of the black bean puree on the bottom of one tortilla. Sprinkle 1/4 of the cheese over the black bean puree. Place a second tortilla on top of cheese. Repeat the process until all of the ingredients are used and you have four quesadilla's. Place the quesadella's on a parchment-lined baking sheet. Bake the quesadilla's for about 4 to 6 minutes or until the cheese has melted. Remove the pan from the oven and place on a cutting board. Slice each quesadilla into fourths. Garnish the quesadilla's with the guacamole, salsa and sour cream

Here are some good instructions, I know they arent for your particular quesadilla but they will work

NOW YOU ARE READY TO ASSEMBLE THE QUESADILLAS.

Place 4 tortillas on a non-stick cookie sheet. Spread the grated cheese over each tortilla evenly about 1/3 of an inch high.

Spread equal amounts of the chicken, pine nuts, and tomato on top of the cheese and place the four remaining tortillas on top.

Place the quesadillas into a 350 degree preheated oven for 7-8 minutes until the cheese has softened and just begins to bubble out the sides.

To serve, cut each quesadilla into 8 pieces with a large knife on a wooden cutting board. Slide the cut quesadilla onto a plate and top each slice with a dollop of the Tomatillo Sauce

Spicy Steak Quesadilla

4 (12-inch) flour tortillas
1/2 cup grated Cheddar, plus 1/4 cup
8 ounces sirloin steak, grilled to desired doneness and thinly sliced
1 to 2 tablespoons minced jalapeno
1/4 cup salsa, plus more for serving
Vegetable oil, for cooking
Cilantro sprigs, for garnish

Lay out 2 of the flour tortillas on a flat surface. Top with 1/2 cup of the Cheddar, spreading evenly over the tortillas. Divide the steak among the tortillas and sprinkle with the desired amount of jalapeno. Top with salsa and remaining 1/4 cup cheese. Top with remaining tortillas and press to seal.

Heat a large saute pan over high heat. Add enough oil to coat the bottom of the pan and lower the heat to medium. Cook until golden brown on both sides, about 3 minutes per side. Repeat with the other quesadilla.

Let cool for 5 minutes. Slice into 8 or 10 pieces. Garnish with salsa and cilantro sprigs.

you need to pre cook the meat and any vegetables going into it. then take your 2 tortilla or one (make sure you fold it in half)..... don't over fill it add a bit of veg oil in a pan like one tablespoon, then add the quesadilla, let it brown then turn it over.
