Slice up your washed potatoes. I leave the skins on. Toss them until coated in a big Zip Lock baggie with a little olive oil, salt, pepper. Bake on a cookie sheet or baking stone at 400 degrees until brown on the outside and tender. I like to add garlic salt and seasoning salt instead of regular salt.

If you want to do a low fat bake that is almost the same as deep fried a convection oven helps a *bunch* but you can still do pretty good using this method.
Cut raw baking potatoes into 1/4th inch strips and cook them in simmering water (i.e. not a full boil) until almost all the raw taste is gone. Per gallon of water used add 2 Tbs sugar and 1 Tbs salt (very important). Preheat oven to 475F. and prepare a cookie sheet by measuring aluminum foil to cover the pan, then gently crumple the foil before lining the pan with the crumpled foil (the crumples let hot air get under the fries). Give the foil a good coating of Pam (or whatever kind of oil spray you'd like) and layer potatoes on foil so they don't touch each other. Give the Potatoes a good top coat of spray and bake. Turn after 10-15 minutes and then continue baking until brown.
Doing them this way you'll have that nice crispy 'skin' and fluffy insides without any of they usual limpness that baked fries have.

Oven Baked Parmesan French Fries
5 russet potatoes
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper
1/2 cup grated Parmesan
Preheat the oven to 400 degrees F.
Peel potatoes and cut into half-inch thick slices (lengthwise) cut again into 1/2-inch thick fries. Place the potatoes into a pot with cold water and 1 tablespoon of salt. Bring up to a gentle boil and simmer until a paring knife tip goes through easily. Cooked about 3/4 of the way through.
Drain carefully and put in a bowl. Add olive oil, 1 tablespoon salt, 1/2 teaspoon black pepper. Toss well and lay out in 1 layer on nonstick baking sheet. Bake until light brown.
When brown, sprinkle with Parmesan and continue to bake until well-browned and crispy and the cheese is melted and caramelized, about 6 to 7 more minutes. Remove and let cool for 2 minutes. Serve.

You can also use red potatoes and coat with a little olive oil and basil. Or you can use just salt and pepper. There is a recipe on the back of the Ranch packets for Ranch Potatoes. They are really good. If you want just good old fries I like the recipie that ky-ky gave. A little tip-try to cut the pieces close to the same size so they bake evenly.

i just had these myself and they're great. I served them with cider vinegar and skipped the Parmesan
1-1/2 lb. baking potatoes (about 3 medium)
1/4 cup KRAFT CALORIE-WISE Italian Dressing
1/4 cup KRAFT 100% Light Grated Parmesan Cheese
PREHEAT oven to 425°F. Wash potatoes; pat dry with paper towels. Cut into 1/4-inch thick strips; transfer to large bowl. Add dressing and Parmesan cheese; toss well.
ARRANGE potatoes in single layer on large baking sheet sprayed with cooking spray. Spray potatoes with cooking spray.
BAKE 12 min. Turn potatoes over with large spatula. Continue baking 10 to 12 min. or until golden brown and crisp.
How to
To easily cut potatoes into strips, slice potato in half lengthwise so it lays flat on cutting board. This will hold it in place as you cut.

Here are the results of Chicago Tribune Test Kitchen experiments to make the
best homemade French Fries:
1. To render liquid fat from beef fat, cook it in a heavy saucepan over low
heat, about 40 minutes or more. Discard pieces of fat which are left over.
Add an equal part of vegetable oil to beef fat in pan.
2. Cut unpeeled potatoes into long strips about 1/4- 3/8-inch wide. Soak in
a large bowl of ice water for about 45 minutes. Arrange on paper towels and
carefully pat dry.
3. Heat oil mixture to 365 degrees.Add potatoes in batches so pan isn't
crowded. Fry until they begin to look partially cooked, about 5 minutes.
Remove and let oil return to 365 degrees. Return partially cooked fries and
continue cooking until they are crisp and golden, 4 to 5 minutes. Transfer to
a paper towel to drain. Sprinkle with salt and serve immediately.
NOTES FROM THE CHICAGO TRIBUNE TEST KITCHEN:When we asked where to find the
best french fries, no one suggested homemade ones, which start with fresh
potatoes instead of a bag of frozen sticks. Making french fries from scratch
is a mighty effort, raising the question of whether the end justifies the
means, so the Tribune test kitchen endeavored to find an answer.
With no apologies to nutritionists, we decided to follow the conventional
wisdom that beef fat is the best way to make good-tasting fries and to try
using less saturated vegetable oil. We got beef fat from the butcher, a big
bag of Idaho spuds and a bottle of vegetable oil to do some experimenting.
Some basic tenets we accepted as truth: The potatoes would be cut by hand
with the peels on. They would be
soaked in ice water for 45 minutes. They would be painstakingly patted dry.
They would be fried twice. The wild cards: What's the best oil to use? Is it
worth all the effort? Beef fat won hands down-no contest. Beef fat fries were
crisp and delicate. They were not greasy and had a subtle taste. People said
it smelled as if we were cooking Christmas dinner, which we took to mean they
