Eve died spiritually the moment she ate from the fruit of the knowledge of good and bad as did Adam. Physically, they both lived long enough to give birth to many sons and daughters. Eventually, however, they died and they remain dead today. It is unlikely that either of them will be resurrected as their disobedience brought sin and death to the entire world of mankind.
How wonderful that your daughter is aware of her spiritual need. Perhaps you could share this time with her and grow closer to her as you both grow closer to God.

We don't know for sure.

However, I have formulated this hypothesis:
The main reason we don't know is because God had to hide the true lineage of The Messiah. The only way The Lord could have been born was through a direct transfer of DNA from male to female. God used the women to bring the savior into the world transferring DNA all the way from Adam's rib to the egg carried in Mary's ovaries. If Satan had known God's plan and how he was to bring salvation to men, he would have tried to kill the woman who was carrying the egg that was carrying the egg that was carrying the egg all the way from Eve to Mary. There has to be a logical explanation for everything God has done because He is perfect.

Normally I'd tell you that Eve is a metaphorical character and that she is not included because the Bible was written back when women were property, but because you are asking about what to tell your daughter and I have no problem with you believing creationism even though I disagree, I would tell her:

"Eve lived with Adam happily for 930 years, too, and they died together and went to heaven to live with God."

It was a patriarchal society.... Family lineage or "family tree" was through the male side of the family. Most people in America, today, track both sides of their family. We place importance on both the mother and father's side of the family. Although, most women still take their husband's last name.
It's a safe bet that she died a long time ago. (ha!) They just didn't make notation of it.

According to the Catholic church, we don't know exactly when eve died nor at what age. But it is believed that they died together since their children were all adults and on their own, so Eve didn't have a son around to care for her. God wouldn't have let Eve be alone.

Nothing happened to Eve because she never existed, I can't believe you would fill your child's head with such mythical nonsense. As a catholic I raised all of our children with common sense, logic, and reasoning within the church, so tell her the truth God bless.

Tell your daughter that she is not mentioned after she and Adam were sent out of the Garden of Eden because it was Adam that we focus on. It was Adam, the first man who sinned and later Jesus the man who reconciled that relationship with God that Adam broke because of his disobedience.
