It's important to drive all 3 in the same day.
If there's an auto mall near you where you can take all three out on the same route, same day, same road conditions, same weather, that's even better.
Driving all 3 consecutively will help you determine which one feels better for you.
Take another day or 2 & then decide.
If you insist on letting us decide, though, I say go for the Legendary Mustang!

First, allow me to complement you on your narrowed selection. For the money, you have found the right 3 cars. I am a car enthusiast/collector and have owned everything from exotic to typical production. Here's my take:
Mazda rx8: Quite boring, but the most reliable. Your won't run through your tires like the other two. The mileage is a bit better, but sacrifices will be made in sport. I owned one for a few months and traded it. It was... somewhat unexciting.
350Z: I have a modified Z as one of my commuter cars. The damn thing is going to be the end of me. It is untame, unrefined, and unreliable. The AC kicks on to compensate for engine heat even when outside temp is sub-freezing. There are load of design flaws, and I'm about to get my third trans in 40K miles of (hard) street driving. My driver&passenger power windows have been replaced three times and my Bose sound system replaced once. But, there is no substitute at the price. This car is manueverable, very fast, and WILD.
Mustang GT: Another short term purchase for me... this car was a bit too heavy. While it accelerates well, the manueverability suffers due to excessive body weight. The engineering seemed better than the Z, but not as precise as the mazda. My dealer called me back in for a day long test-drive of the new 500 mustang. If this is in your price range, go for it. But, it is in a different class than the first three. The weight problem, while not fixed by reduced weight, seemed to be less noticeable with the extra HP. I will probably trade my Z for a 500 when I have time... but that is a different range than the above-mentioned three.
Within those three, take the Z if you want pure fun. Take the Mustang if you want a sort of hybrid between the power and engineering. I don't recommend the mazda. Good luck!

Dodge Charger R/T, Grand Prix GXP, or wait for the new Dodge Challenger. If I had to pick from your choices I would take the Mustang. The RX8 would be next. It is a shame it does not have more power.

low horse power doesn't nesecarilly mean poor performance.
I do not know a lot about these cars but I would chech out a Pontiac GTO. they have a 5.8 L V8 and seat 4 people.
if it is a new styled mustang gt go for that one.

i own a repair shop,and out of the ones you have there the mustang is the most logical choice there is,,and it has a little room on it also but id take a few test drives and see which ones i liked the best,,you know the test drives are free,have fun with them i did when i bought mine,,good luck,i hope this help,s.,,have a good x-mas.

The mini and Mazda is fairly a performance vehicle... yet I doubt it's going to carry you n your relations. when you're unmarried and a pupil choose the RX-8 or Mini cooper when you're unmarried and dealing choose the BMW, Volvo, Lexus once you've a relations choose the Toyota Camry, yet attempt to get the three.5 Q V6, or the Honda CR-V Over all i'm leaning in the route of the Camry or BMW
