Make sugar cookies in holiday shapes, but bring the decoration stuff into class and have the kids decorate their own. They love that kind of stuff!

Chewy Granola Bars
1. Melt
Combine honey, butter, brown sugar, and vanilla in a medium saucepan. Bring to a boil over medium heat, then simmer for a few minutes until ingredients are melted.
2. Combine
Combine granola, raisins, coconut, chocolate chips, and slivered almonds in a large bowl.
3. Cool
Take sugar, honey, and butter mixture off heat and place over an ice water bath to cool slightly.
4. Incorporate
Pour wet ingredients over granola mix and stir until well incorporated. The mixture will be sticky but somewhat dry.
5. Press
Spoon granola into an ungreased baking dish and press firmly into the pan. Top with more mini chocolate chips. Allow to set in refrigerator for 2 hours; then slice and serve.

I hope your daughter goes to a private school.. Don't want too much of a Christmas theme..
I always like the holiday wreaths made with corn flakes, marshmallows, green food coloring and red hots.
Kind of like rice crispy treats but formed in to wreath shapes

Make snowmen cookies, or tree cookies and decorate accordingly. Is this your first year teaching?
You could also make a Christmas Tree Pinyata (I know I spelled that wrong) and fill with candies....be creative and have fun!!!! Good luck!

Sandra Lee (Food Network) made sleighs with graham crackers with upward facing candy canes on the bottom. There was a lot more to them, but I'm sure you can find them on the Food network online.

What about something simple like rice krispie treat made with those little red cinnamon candies in them or the red & green mini chocolate chips.
That way she can help you make them as well. My boys still like helping mom make krispie treats as long as I ALWAYS put in the little red cinnamon candies.....Kids!!
I just thought of something else...
Popcorn Balls
(1) sm. pkg. sugarfree Jell-o (use 1 box of red & make a 2nd batch with green)
1 cp. sugar (or 1/2 cp. splenda)
1 cp. white karo syrup
pop 1/2 lb. popcorn & set aside
mix jell-o, sugar & syrup in a sauce pan & bring to a boil..SLOWLY
Pour over popcorn & form into balls. Allow to cool on wax paper, wrap in plastic wrap with a bow to secure it.
