Cats are creatures of habit and learn very well from classical conditioning (a psychological principle of learning), but this only works if you're consistent. My advice is to gently remove him from the table or countertop to the floor EVERY TIME you find him there and say "NO" very seriously so that he knows you're disappointed with him.

This should eventually teach him not to do it, or otherwise he will at least know what he is doing is wrong or disapproved of--and then all you'll have to do is look at him when you find him there and he'll quickly get off to avoid the serious consequences of your disappointment.

This is the nicest answer so far; there is a mechanism that you can place on the cats collar and the under somewhere around the counter and when the cat jumps to that elevation it will make a buzz that cats dont like. Im not sure where to buy one, but look online or ask in a pet store....my aunt has one for the litchen table.

I've trained all my cats to stay off of the food-prep counters, stove & sink in the kitchen by getting the plastic label pockets from FedEx (they're free), removing the brown backing and laying them so the sticky side is facing up. Then when the cat jumps up there, he gets his feet stuck on the sticky plastic. It only takes a few tries before they quit--and if you suspect they may be getting up there when you're not around, just put the sticky paper up occassionally (so it doesn't become a routine that they will learn). They will figure out that they cannot predict when the sticky paper will be up there and when it won't be so they will just avoid going up all the time. Just be prepared to remove sticky paper from your cat and anywhere the cat has fled to trailing paper (I don't know if I'd try this with a long-haired cat though, all my cats are short to med haired and the sticky paper comes off easily with any hairs about to be shed).

It ain't easy believe me. We keep all food off the countertops. We do say no in a firm voice then one whack on the a s s. Fortunately they don't get up there much.

Slightly crumple aluminum foil over the surface. Also try balloons on top of the counter. Most cats hate balloons. If they start liking them, just pop one he's playing with.

Get a can of compressed air. The type they use for cleaning computer keyboards. Every time they get on, spray them in the face with air. After awhile you just have to get the can out. It doesn't matter if is has any air left.
