We need to know what we can use as an alternative to light corn syrup,which does the same thing,which is more easily available.We can not find corn syrup in the shops.We live in Australia.

Well, the big brand name of corn syrup here in the states is Karo, but if you can't find that... there might be some kind of colorless, flavorless sugar syrup you can get. I hear that corn isn't a popular food in other countries, so it might be made out of something else.

However, you can substitute 1 cup of granulated sugar and 1/4 cup of water for 1 cup of corn syrup, according to my Better Homes and Gardens Cookbook. If I remember correctly, "caster sugar" is close to granulated sugar.

Light Corn Syrup Substitute recipe

2 cups granulated sugar
3/4 cup water
1/4 teaspoon cream of tartar
Dash of salt

Combine all ingredients in a heavy, large pan. Stir and bring to a boil. Reduce heat to a simmer and put cover on it for 3 minutes to get sugar crystals off the sides of the pan. Uncover and cook until it reaches soft ball stage. Stir often.

Cool syrup and store in a covered container at room temperature. It will keep for about 2 months.

Makes almost 2 cups.

Ingredients:
2 cups sugar
1 cup water

Instructions:

1. Combine ingredients.
2. Over medium heat, bring to full boil.
3. Boil for one minute, or until all sugar particles are dissolved.
4. Transfer mixture into airtight refrigerator container.
5. Use to replace corn syrup in recipes or to sweeten iced tea or other beverages.

Try golden syrup. it's widely available in the UK so you might be able to find it where you live.
